I went out to the warehouse to look at the Lippert Electric A-Frame Tongue Jack, # LC285318. In order to remove the screws that secure the cover you will need a long and thin phillips head screwdriver. If you don't already have one, you'll want to purchase a Protective Cover, # UF38-944020, to keep your jack dry when you are at the campsite. This will protect the head of the jack and keep the motor protected from the elements.

Yes. A 3,000 pound electric jack will work just fine. Based on your trailer weighing 7,500 pounds loaded will equate to your tongue weight between 750-1125 pounds. Although you can choose a 2,500 pound (see link attached) electric jack, I would highly recommend the Stromberg Carlson # JET-3555 (white) or # JET-3755 (black) as they are rated at 3,500 pounds. From the center of the shaft to the front outside edge of the motor housing is 3-1/2 inches. I included some of the mounting plate when I measured for height, which is 8-1/4 inches, since that sticks out over the shaft as well. We highly recommend getting yourself an electric trailer jack. Marshall has always had one on his Lance, and Kelly just recently got our #1 recommended Husky electric jack after almost three years living with a manual jack, and she couldn't be happier.
