Yes. A 3,000 pound electric jack will work just fine. Based on your trailer weighing 7,500 pounds loaded will equate to your tongue weight between 750-1125 pounds. Although you can choose a 2,500 pound (see link attached) electric jack, I would highly recommend the Stromberg Carlson # JET-3555 (white) or # JET-3755 (black) as they are rated at 3,500 pounds. I think you will really like the price point! I have also included an FAQ for you too.

Mr. Cover named his invention as a tribute to another inspiration, the Tom Swift science fiction novels he read as a child, one of which was “Tom Swift and His Electric Rifle.” He created an acronym from “Thomas Swift Electric Rifle,” adding the “A,” he explained to The Washington Post in 1976, “because we got tired of answering the phone ‘T.S.E.R.’ ”
Those who are interested in buying items like these have many different types available for their needs. For example, a trailer fender is necessary for protecting your RV from impact damage. They can fit where old ones were and fix any auto body concerns from which your vehicle suffered. More specific types include RV awnings that provide you with a comfortable place to sit during rainy weather.
There are several places water can get into any given jack. Water should be able to drain out though. If the exit points which would be at the lowest point are clogged then the water would not be able to exit. You could use a jack cover like # UF38-944020 for future use. There is no telling how much damage is really done. If there is enough corrosion then something inside could be structurally compromised and fail when you have weight on the jack. According to the information I was able to find, the Ultra-Fab Electric A-Frame Jack you referenced, part # UF38-944016 would be a good choice for the Keystone Outback Toy Hauler you mentioned. The jack has a 3500 lb lift capacity, which is plenty for the listed tongue weight of the toy hauler, plus anything stowed on it. Among the many features of this jack, I like the fact that is uses LED lamps for long life as well as the fact that a 9/16 inch socket wrench can be used in an emergency...
We highly recommend getting yourself an electric trailer jack. Marshall has always had one on his Lance, and Kelly just recently got our #1 recommended Husky electric jack after almost three years living with a manual jack, and she couldn't be happier. For Kelly, it was one of those "Why didn't I do this a long time ago" reactions. Oh well, nothing like living in the present and not bitching a fit every time you have to hook up! No more worries about Kelly's back going out because of her jack. Her back is jacked, but her back won't go out due to a jack. Something like that.
